Three Things That Make Me Smile
Spring is in the air. I can’t complain, but we’ve had an unusually cold and wet winter here in Southern California, so I am appreciating spring that much more (and thinking of you in the rest of the country and sending sunshine your way!).
Even with this sunny, warm weather, we’ve had recent bouts of flus and colds in our house that have kept us all busy. When the kids get sick and our days are less predictable, I find myself reaching for things that are guaranteed to make me smile.
Here are three that I’m loving right now.
A Beautiful Spring Purse
Gabriel for Sach is up-and-coming Spanish designer who is making gorgeous handbags that remind me of the stylish European woman I’d see when I studied in Spain. I’d take any one of them, but this fresh purse in either blue or white seems just perfect for a sunny spring day.
I keep coming back to these super easy skillet enchiladas. They are full of flavor and pretty quick to put together. I do recommend making your shredded chicken in advance (I make mine in the slow cooker) and I use about twice as much salsa verde as the recipe suggests. Tip for parents of picky kids: I grate the zucchini to be very small so the kids don’t fuss and ask for the “green things” to be picked out of their dishes, and I still sneak some nutrition in.
